The Blue Bison meat company is based in beautiful Ste. Genevieve, MO. Our bison roam our Crown Valley Winery vineyards along side our grapes. For this reason, naming our product Blue Bison was fitting, reflecting the color of our grapes. These animals are farm raised, and are given no hormones or antibiotics. Whether you buy from our online store, or visit Crown Valley Winery, you will receive the same great product and friendly service that many customers have come to expect from Crown Valley.
Only in the last 10 to 15 years have that North American Bison returned from the near extinction they faced in the 1890s by European settlers. The Plains Indians’ primary food source became eliminated resulting in the survival of less than 2,000 Bison. However, through careful breeding and nurturing, bison have returned and flourished.
Today it is estimated that the total herd size is in the 500,000 range, about 250,000 of which are based in Canada. This of course is a far cry from the approximate 50 million animals that roamed the western ranges prior to European settlement. However, today's herd size is still substantial enough to sustain bison meat consumption to a point where it is expected to quadruple by the year 2010.
There is plenty of room for growth for this all-natural non-genetically altered lean red meat. With consumer trends leaning towards more naturally raised meat, a similarity between beef and bison cuts, and stable if not lower consumer prices anticipated. Thus resulting in Bison product growth and usage is expected to be nothing less than dramatic for the foreseeable future.
